OUR OYSTERS

PERMUDA ISLAND SELECTS
Our Permuda Island Selects and Petites are farmed on 55 acres right in the middle of Stump Sound. Naturally they reflect Stump Sound, the historic district of North Carolina oysters, with the classic taste Stump Sound oysters are well renowned for. A uniquely brothy brine, quickly diminishing into a creamy, buttery finish with a distinctive earthy undertone. Perfectly delicious raw while big enough to enjoy charbroiled or steamed.
STUMP SOUND GOLD
Our Stump Sound Gold oysters are high quality Crassostrea Virginica diploids grown on bottom next to the Permuda Island State Nature Preserve. Salty and buttery, they are everything you expect from a Stump Sound oyster. Great for steaming and roasting.

ABOUT US
Established in 2018 out of a love for the water and passion for conservation, aquaculture was the perfect fit for the Gadow family's next chapter of working with shellfish. With a lengthy family history of building work boats, crabbing, oystering, and canning; a return to the water just felt right.
Fast forward to the present, after a lengthy learning process and a few mistakes along the way, we are now proud to offer a high quality product to some of the best restaurants in the South, the Permuda Island Select. Only after a rigorous culling process based on our six point test, does a Permuda Island Select make it to market.
